Sea Salt & Black Pepper to Taste
1 Teaspoon Cumin
Tablespoon Olive Oil
1 Teaspoon Smoked Paprika
1 Teaspoon Coriander
1 Clove Garlic, Minced
Yellow Onion, Chopped
1 Carrot, Chopped
14 Ounces Tomatoes, Chopped
4 Medjol Dates, Chopped
4 Tablespoons Chicken Stock
Lemon, Cut into Wedges
4 Tablespoon Green Olives, Pitted
2 Tablespoon Pine Nuts
Mint, Chopped for Garnish
Directions:
Mix your chicken thighs with your salt, pepper, oil, paprika, coriander and cumin.
