Sourdough is a type of bread that is made using a natural leavening agent called mother yeast. Unlike commercial yeast, which is made using a specific strain of yeast, mother yeast is a combination of wild yeast and bacteria that is naturally present in the air and on the surface of grains. When mixed with flour and water, mother yeast ferments the dough, producing carbon dioxide gas that causes the bread to rise.
