Tantanmen is a noodle dish that originated in the Sichuan province in 1841.
Its name translates to 'carrying noodles'. Dandanmian was a container of noodles suspended on one end of a pole, and a basket of spicy sauce on the other, carried over the shoulder by a noodle vendor.
