The offer of prepared meals of a different nature, packaged in individual portions (paellas, stews, salads, fruit salad...), reflects a new model of food consumption generated by social changes in lifestyles and eating habits. The latest bet on the market goes further and is presented to the consumer in a complete menu format made up of first course, main course and dessert, a new concept of "fast food" ready to take away, which breaks the myth that all fast food is trash.

Currently, organizations and scientific societies of recognized prestige do not hesitate to attribute to eating habits a marked specific weight in the conditions or determinants of health, although the relationship of dependence between food and health has always been a constant. In the oldest cultures and civilizations, this observation was more or less diffuse, although it was expressed in phrases of strong meaning such as "Let your food be your medicine and your medicine be your food", attributed to Hippocrates, the teacher or "father of Medicine". Over time, this association did not decline despite the period of scientific obscurantism that occurred during the Middle Ages, although at this time it was based more on trickery than on rationality. It was not until the Modern Age and the scientific revolution associated with the Enlightenment when the scientific foundations of current medicine were laid. Already in the 19th and 20th centuries, thanks in part to the birth of food science as such and epidemiology as an organized discipline, current knowledge about the relationships between food and health began to be based, both in relation to population groups as to specific individuals.
